Onion Pie Amazingly even people who don't particularly care for |
INGREDIENTS:
| 3 | large onions, sliced |
| 1 | tbsp. butter |
| 3 | eggs |
| 2 | cups half-and-half cream |
| salt and pepper to taste | |
| 1 | Pastry for double-crust pie, 9 inches |
| 4 | bacon strips, cooked and crumbled |
| 1 | cup shredded cheddar cheese |
| 1. | In a small skillet, sauté onions in butter until golden brown. |
| 2. | In a large bowl, beat eggs and cream. |
| 3. | Add the onions, salt and pepper. |
| 4. | Line a deep-dish 9 inch pie plate with bottom pastry. |
| 5. | Add egg mixture; sprinkle with bacon and cheese. |
| 6. | Roll out remaining pastry to fit top of pie; place over filling. |
| 7. | Seal and flute the edges; cut slits in top. |
| 8. | Bake at 350° for 55-60 minutes or until crust is golden brown. |
| 9. | Let stand 15 minutes before cutting. |
