Onion Pie

Amazingly even people who don't particularly care for
onions liked this recipe! So if you already love onions,
imagine how perfect this dish is!


Serves 6 to 8

INGREDIENTS:

3 large onions, sliced
tbsp. butter
3 eggs
cups half-and-half cream
   salt and pepper to taste
1 Pastry for double-crust pie, 9 inches
4 bacon strips, cooked and crumbled
1 cup shredded cheddar cheese
DIRECTIONS:
1.   In a small skillet, sauté onions in butter until golden brown.
2.   In a large bowl, beat eggs and cream.
3.   Add the onions, salt and pepper.
4.   Line a deep-dish 9 inch pie plate with bottom pastry.
5.   Add egg mixture; sprinkle with bacon and cheese.
6.   Roll out remaining pastry to fit top of pie; place over filling.
7.   Seal and flute the edges; cut slits in top.
8.   Bake at 350° for 55-60 minutes or until crust is golden brown.
9.   Let stand 15 minutes before cutting.
