Cucumber Mango Spring Salad

This tangy salad is perfect for that summer picnic!

INGREDIENTS:
1/8 cup fresh lime juice
tbsp honey
2 tbsp sherry vinegar or red-wine vinegar
½ tsp garlic, minced
1/8  cup olive oil
¼ tsp salt
1/8 tsp pepper

DIRECTIONS:

1. In a small bowl, add lime juice, honey, vinegar, and garlic. Whisk about 3 minutes.
2. Slowly drizzle in olive oil and continue to whisk until blended. Add salt and pepper.
3. In a salad bowl, add cucumbers, mangoes, cabbage, lettuce, and dressing. Toss salad
ingredients together and serve.

Picnicking & Tailgating Tips: Make the dressing ahead of time, and place in a plastic container and put in ice chest. Put cucumbers, mago, cabbage, and lettuce in large storage bag and seal. At the picnic or tailgate site, add the dressing to the cucumber mixture and toss. Take from bag and put in paper salad bowls ...enjoy!
