With the same great taste as any other coleslaw, this |
| ½ | cup light mayonnaise |
| 2 | tbsp white wine vinegar |
| 1½ | tsp Dijon mustard |
| ½ | tsp salt |
| ¼ | tsp pepper |
| 4 | cups shredded green cabbage |
| 2 | cups shredded red cabbage |
| 1½ | cups shredded carrots |
| 1 | each: red and yellow bell pepper, cut into thin strips |
| ½ | cup thinly sliced scallions |
| 1. | In a large bowl, whisk together mayonnaise, vinegar, mustard, salt, and pepper. |
| Add cabbage, carrots, bell peppers, and scallions, tossing to combine. | |
| 2. | Refrigerate until ready to serve. |
