Confetti Coleslaw


Confetti Coleslaw

With the same great taste as any other coleslaw, this
side is especially festive and exciting!

Makes 8 cups

INGREDIENTS:
½ cup light mayonnaise
tbsp white wine vinegar
tsp Dijon mustard
½ tsp salt
¼  tsp pepper
cups shredded green cabbage
cups shredded red cabbage
cups shredded carrots
1 each: red and yellow bell pepper, cut into thin strips
½ cup thinly sliced scallions

DIRECTIONS:

1. In a large bowl, whisk together mayonnaise, vinegar, mustard, salt, and pepper.
Add cabbage, carrots, bell peppers, and scallions, tossing to combine.
2. Refrigerate until ready to serve.
