| 24 | cherry tomatoes |
| 1 | small ripe avocado |
| 1 | tbsp fresh lime juice |
| 1 | tsp coarse salt |
| 2 | oz jalapeño or tomato-and-olive Jack cheese, diced into 24 pieces |
| 1. | With a serrated knife, cut ¼ to ½ inch off the top of each cherry tomato. |
| 2. | With a melon baller, scoop out the seeds, leaving the shell of the tomato intact. |
| 3. | In a small bowl, mash together avocado, lime juice, and salt until blended. |
| 4. | Spoon about ½ tsp avocado mixture into each tomato. |
| 5. | Top with a piece of cheese. |
| 6. | Skewer each tomato to make a lollipop. |
