Cherry Tomato Lollipops

Makes 24 lollipops

INGREDIENTS:
24 cherry tomatoes
small ripe avocado
1 tbsp fresh lime juice
1 tsp coarse salt
2 oz jalapeño or tomato-and-olive Jack cheese, diced into 24 pieces

DIRECTIONS:

1. With a serrated knife, cut ¼ to ½ inch off the top of each cherry tomato.
2.  With a melon baller, scoop out the seeds, leaving the shell of the tomato intact.
3. In a small bowl, mash together avocado, lime juice, and salt until blended.
4. Spoon about ½ tsp avocado mixture into each tomato.
5. Top with a piece of cheese.
6. Skewer each tomato to make a lollipop.

Each serving has approximately 26 calories, 2 g fat, 0 cholesterol, 0 sodium, 2 g carbohydrate, 0 fiber, 1 g protein
