Cantaloupe & Cucumber Salad

Cantaloupe and cucumbers make a great team! Add lime juice, onions and cilantro leaves and you've made a great healthy salad! This is a very easy salad to make and goes together quick as a snap.

INGREDIENTS:
¼ cup fresh lime juice
  Salt and pepper
1 lg English (seedless) cucumber (1 lb), peeled in alternating strips and coarsely chopped
2 ripe cantaloupes, coarsely chopped
green onions, thinly sliced
½  cup loosely packed fresh cilantro leaves, chopped

DIRECTIONS:


1. In large bowl, whisk lime juice, ¼ teaspoon salt, and 1/8 teaspoon freshly ground

black pepper until blended.

Add cucumber, cantaloupe, green onion, and cilantro; toss to coat. Makes 8½ cups.
