
Braised Corn Beef
A traditional dish complete with cloves, safflower oil, red onions,
carrots, peppercorns and 24 ounces of dark ale! Pull up a seat
and dig in.
INGREDIENTS:
| 3-4 | lbs corned beef |
| ½ | cup dijon mustard |
| 2/3 | cup brown sugar |
| 6 | whole cloves |
| 2 | tbsp corn or safflower oil |
| 24 | oz ale (dark) |
| 1 | large red onion, quartered |
| 4 | medium carrots |
| (cut diagonally in 1-inch lengths) | |
| 1/2 | cup celery leaves |
| 12 | peppercorns |
| 1. | Press cloves randomly into beef. |
| 2. | Rub on the mustard. |
| 3. | Roll beef in brown sugar. |
| 4. | Heat the oil in a large oven-proof pan or Dutch oven. |
| 5. | Brown meat on all sides very quickly (be careful not to burn the sugar). |
| 6. | Add all other ingredients. |
| 7. | Cover pot with foil and roast in the oven for 2½ to 3 hours |
