Tuna Salad
March 23, 2008

In this video Sean and Cathy Cummings use yellowfish tuna to make this yummy Tuna Salad. This will be a salad everyone can enjoy. Let's start by using some cajun spices. To keep your mess down you can put your spices in a plastic container and then coat both sides. After both sides are equally coated drop into a pan of "smoking hot" olive oil and let it sit for a minute and then you'll turn it over. Meanwhile we can get the salad ready. Ring a plate or platter of your choice with slices of cucumbers. Next add a bag of the iceberg lettuce. Then add a great product called "Just Add Lettuce" it has provolone cheese, black olives and roasted red peppers and pepperoncini.  Mix that all together with your iceberg lettuce and add to your plate of sliced cucumbers. Now it is time to flip over the tuna. If you don't like it rare, cook it longer. This video prepares it a little rare don't let it freak you out. Slice tuna into nice slices and lay them on top of the salad. Fan slices out a little so each slice can be seen. To make it a little more manly, drizzle some vidalia onion dressing over the top and add some chow mein noodles. This would be a $50.00 dinner in New York! Enjoy!

Reuben Sandwich
March 15, 2008

In this video Sean and Cathy Cummings prepare cute little reuben sandwiches with a little spinach salad to go with them. This could be an every day meal or a nice treat for a St. Patrick's Day party. Use a few tablespoons of butter to get the pan ready. In this video they are using little rye sandwich breads for a party atmosphere but you could use any type of bread you prefer. When the butter has melted, toast your little pieces of bread. All reuben's contain the same key ingredients:  sauerkraut, rye bread, corned beef, thousand island dressing and swiss cheese. While your rye bread is toasting let's get the spinach salad ready. With all the pre-packaged salads available you have many choices. In this video they are using packaged spinach salad.  Add some frozen vegetables and extra virgin raspberry Vinaigrette dressing. Mix that all up and place in the center of your plate. Pull off your toasted rye bread slices and add your corned beef and sauerkraut to the pan. You can either chop your corned beef up or leave it whole - it's totally up to you.  Add a piece of swiss cheese and a dollop of thousand island to each piece of toasted bread.  After the corned beef is cooked (all the water is gone from the sauerkraut) pile on top of bread. Add little reuben sandwiches to plate on either side of spinach salad and serve.

Chili
January 22, 2008

In this video Sean & Cathy will be making chili. Not just any chili but Cathy's Mom's Chili recipe. You will need to chop up one onion and sauté it. Add the onions to 2 pounds of ground beef and brown in a pan. When your meat is ready add all your dry ingredients. 1 tbsp red chili flakes, 1 tbsp black pepper and the secret ingredient - a packet of William's Chili Seasoning. Stir that all together. You can add many different types of spices, etc to make it your own.  These are just the spices Cathy's mother used. Then it's time for the tomato ingredients. Add 2 cans of Hunt's Tomato sauce, 1 can of Hunt's Whole Tomatoes. Squeeze the whole tomatoes, don't leave them whole. This adds great texture to your chili. Be careful - it can be messy and juice could squirt all over the place. Pour some of the juices leftover from your can of whole tomatoes. Bring it all to a boil. Once it comes to a boil you are ready to add the beans. Cathy used Bush's Best Chili Beans with mild sauce.  Add 2 cans of chili beans.  Stir that all up, let it simmer for about 20 minutes and you're done.

Chicken Pot Pies
March 5, 2008
In this video Sean & Cathy are making "chick" food. You will need some Pepperidge Farm Puff Pastry Shells. Cook these at 400° for about 20 minutes. Pop off the tops of the pastry after it comes out of the oven and has cooled down a bit. Now you are to make your chick lunch. It's like a little chicken pot pie. Take some chicken, frozen vegetables, and cream of chicken soup. Mix all that together. Microwave for about 2 minutes.  Fill your pastries with this mixture. Lay out a few romaine leaves on your plate. Put your puff pastries on top of the lettuce. Then be sure to add the tops back to your puff pastries. Now take your dressing - they used poppy seed dressing in this video - and drizzle it right on top of the whole plate in nice wide circles. Then you're finished and ready to serve.
Guacamole
July 23, 2008
In this video Sean & Cathy are making a guacamole dip that will blow your friends away. They are going to use Wholly Guacamole which is sort-of cheating. Remember to choose guacamoles that have a little squeeze to them. Add some cilantro and then all the basic ingredients found in any guacamole dip. These are tomatoes, onions and fresh limes. Then add some salt and cayan pepper. Sean & Cathy didn't use cayan pepper this time since they chose to use the Spicy Wholly guacamole mix. You are now ready to mix up all your ingredients and serve. For a great looking serving bowl you could use a real bell pepper hollowed out, place some pretty lettuce leaves behind your chips and you are ready to go!
Chicken Noodle Soup
February 2, 2008
Sean & Cathy are making Chicken Noodle Soup in this great video. It's easy and everyone loves it! Add some oil to a hot pan, some onions, celery, carrots, and tomatoes from a can with the juice. Sauté those ingredients first and then add your garlic. You don't want that garlic to burn so add it after most of the other stuff has cooked up a bit. Then add some Swanson's chicken broth, peel the meat off a roastery chicken (minus the skin) and lastly add in your egg noodles. Let that cook for about 15 minutes bringing it to a boil, cover and cook 15 minutes more. Once it is cooked and ready to go you can add some parsley. When you aren't feeling well this soup will cheer you right up.
Lake Egg Sandwiches
September 26, 2008
In this video you'll learn how to make Cathy's Lake Egg Sandwiches her dad used to make for her when she was a little girl. You'll need peppers, onions & potatoes. Toss in all those ingredients into a skillet and cook until it is nice and brown. Use whatever type of cooking oil or butter you prefer. Then add 4 eggs (whip them up first) to your skillet after the other ingredients have browned up. Mix it all up until the eggs are totally cooked. You'll need to add salt and pepper for sure! You can even add some salsa if you like. Pour it on some delicious bread from Buy For Less and it's ready to eat! What a totally tasty treat!
Mashed Potatoes
November 27, 2008
In this video Sean & Cathy are going to make some Mashed Potatoes and show us how to soup them up a little bit. The difference between potatoes at home and mashed potatoes in a restaurant is the butter! They used a whole stick of butter, a half of a 16 oz. carton of sour cream, some salt, fresh cracked pepper and some milk. Some other neat ingredients you can use to "trick it out" a little: green onions cooked in a bit of milk, Ajvar a jar of roasted red pepper, and then a favorite - bacon and cheese! In your serving dishes put in a fair amount of potatoes and then add a bit of the green onions, roasted red pepper, and bacon and cheddar to one of each of your dishes for your guests to try.  Who knows which one will be their favorite?!
Turkey Gravy
December 4, 2008
Sean & Cathy are going to show us how to make Turkey Gravy in this video. Turkey Gravy is a staple for most holiday dinners. First use a packet of your choice of gravy sauce for a base, Durkee is a great choice. Follow the directions on the back. In a sauté pan or skillet put in a bit of butter, fresh cracked pepper (use the back of a spoon and crush pepper corn) and some fresh garlic. Toast that up a little and then add in your gravy mixture you made from the turkey gravy packet. Stir that all up. Add some fresh thyme and fresh rosmary to top it off. Now you don't have to use canned gravy - you can make your own!
Tuscan Bread
September 9, 2008
Sean & Cathy are going to show us how to make the worlds easiest appetizer. Use Tuscan bread and grill the pieces. you can use olice oil or butter. To set up your oil plate, drizzle in your oil, add some fresh ground pepper, a pinch of salt and fresh rosmary to flavor the olive oil. Next take your grilled bread and spread a little bit of sour cream on the bread. Sprinkle on some grilled vegetables. It's that easy!
Cathy's Pasta Salad
July 23, 2008
Cathy is going to share a trade secret with us in this video. Sean will be her assistant. First take a handful of penne pasta (a couple of cups), and handfuls of romainne lettuce, fresh cut broccoli, red and green bell peppers, fresh mushrooms, calamata olives and the secret ingredient - Wishbone Italian Dressing. Then add some parmesan cheese, some capers and some fresh cut basil. Mix that all together and whala - it's ready to enjoy!
Green Rose Salad
September 18, 2008
In this video Sean & Cathy will make a Green Rose Salad. Use a nice piece of butter lettuce and take off the hairy knob on the bottom. Spread it out and it begins to look like a flower. Add some grilled chicken, some red and green bell peppers and some berry medley mix from Welch's. Then add chow mein noodles right on top. Add your dressing of choice and even drizzle a little off the plate to make it more fancy.
Cranberries
November 16, 2008
Sean & Cathy will show us how to make cranberry relish. In a skillet or pan add a bag of ocean spray cranberries, a couple of cups of sugar, some fresh mint, ginger, orange zest and a bag of Welch's dried fruit medley and pecans. Cook that until the sugar breaks down. Don't bring cranberries in a can. Make this wonderful recipe and be the hit of the party!
Panini
September 29, 2008
Sean & Cathy are going to wow us with this super great video on making panini sandwiches using a George Forman grille. Use some pogacha bread or another type of thick bread of your choice. Next try some roasted red peppers and chèvre cheese (goat cheese) and any other ingredient you want to add. Spread the ingredients on your bread. Sean used roasted red peppers and then crumbled on some goat cheese. Spray the bread lightly with Pam before you put it in the grille. You want a good crust. Next you can make a neat little salad to go with your sandwich. In a bowl, add some Asian Cole Slaw in a bag, sliced cucumbers, onions, wishbone italian dressing and a little bit of sesame oil. Mix that all up and put it on your plate with a few of the sliced cucumbers towards the front. Add your toasted panini sandwish to your plate and dig in.
Easy Trifle
March 18, 2008
Sean and Cathy are making an easy Valentine's dessert. They will instruct us on how to make the easy version of a Trifle. An English Trifle is just a chocolate cake, some sour pitted cherries, a little bit of raspberry preserves, whipped cream and pudding. You can use your own homemade chocolate cake or some store bought chocolate cake. Sean used a store bought cake of course due to his time restraints. Heat up your raspberry preserves in the microwave to warm it up and make it easier to smooth onto the cake. Cut your cake into 3 x 3 squares. Spoon on the raspberry preserves on one of your cake squares and then add another cake square on top, like a little cake sandwich.  Next take Hunt's vanilla pudding or make your own and put that right on top of those two sandwiched pieces of cake. Try not to let the pudding go over the side. Now add some sour pitted cherries from a jar or a can to the top of the pudding.  Then place on top yet another cake sandwich - cake square, preserves and cake square. Finally, to top it all off add some whipped cream in a can. Sean always tells us that plating the food or decorating the plate can make all the difference. Buy some Lyons Designer Dessert Sauce - white chocolate flavored - for plate decorating. Add a little button dollip to the side and then criss-cross lines across the rest of the plate. It will look simply marvelous - a $12.00 dessert!  Happy Valentine's Day!
Tiramisu
December 17, 2008
Today Sean & Cathy are making holiday individual pumpkin tiramisu. Take Roland Lady Fingers, which are little cookies, and roll them in egg nog. Set 4 of those cookies on a plate side-by-side. Combine Ready Whipped cream, a tablespoon or so of canned pumpkin and ¼ tsp of pumpkin spice in a bowl and mix all together.  Spoon that mixture into a cake bag or you can use a zip lock plastic bag and snip off one of the corners. Squeeze lines of the pumpkin mixture across your row of cookies, add another layer of 4 egg nog dipped cookies. Then squeeze six little starbursts on that final layer of cookies, sprinkle plate and dessert with a little bit of pumpkin spice and you are done.
Spaghetti Squash
October 21, 2008
In this video Sean and Cathy are making spaghetti squash into a vegetarian dish with a hint of Italian. First you need to get into the squash. It can be difficult to get into at the start but once you're in it's all good. An easy way to bust through is to take your knife and hit your squash and then just work your knife into it.  Once you've cut it in half, clear out any seeds from the middle. Place it upside down in a glass dish and add some water. Cover that dish and then microwave for 8 minutes. There are also instructions right on the squash for you to follow as well. While that is cooking you can make your marinara sauce.  Start with some olive oil and saute some fresh mushrooms - just slice them up. Then for a bit of a kick add banana peppers and some calamata olives. Mix up those ingredients and then add Paul Newman's Roasted Garlic and Pepper Red Sauce. You can even throw in some fresh basil. Now you've got yourself some homemade sauce!  Your squash should be ready and cooked by this time. Take a fork and pull the squash right off the skin. It looks sort-of like spaghetti. Pile some of that cooked spaghetti squash on to a plate, add your sauce and top with parmesan cheese. Yummy!
